2 eggs
1 link of sugar free, nitrate free chicken sausage (any flavor)
2 tbsp sauerkraut
1/2 cup onion, red and green pepper, diced
1/2 cup cherries (or other fruit)
Coconut oil

Heat a nonstick pan over medium heat. Add small spoonful of coconut oil and cook sausage until crispy on the outside and warmed all the way through. Remove from pan. Turn to medium-high heat, add more coconut oil and add chopped onions and peppers. Season with salt and pepper and sauté until tender, about 3-5 mins. Move to the side, and in the same pan, add the eggs. Cook for 1-2 mins. Then, add a splash of water to the pan and cover until the whites are fully cooked through but the yolks are still runny. Season with salt and pepper. Serve eggs with onions, peppers, sausage, sauerkraut and fruit.
