Best Fresh Lemon Vinaigrette

1/4 cup red wine, or apple cider vinegar
2 Tbsp prepared Dijon mustard
1 tsp dried oregano
1 clove garlic, minced
1/2 tsp sea salt
1/4 tsp freshly ground black pepper 1/2 cup olive, or avocado oil
2 Tbsps fresh lemon juice
Whisk vinegar, Dijon mustard, oregano, garlic, salt, and black pepper together in a small bowl. Slowly add olive oil into the vinegar mixture while continuing to whisk. Whisk lemon juice into the mixture. Pour dressing into a sealable glass jar, seal, and shake until combined. Store refrigerated in a sealed glass jar for 1 week. Shake briskly before serving.
