Cinnamon Banana Crepes

Gluten free crepes:
1 egg
1/2 cup milk of choice (I used a coconut almond blend)
1/3 cup brown rice flour
1/2 tsp cinnamon powder
1 tbsp pure maple syrup
Mix everything together till smooth.
Pour 1/4 of mixture into a heated skillet and spread out.
Cook till the crepe looks ready and then gently flip it to cook the other side.
Yields about 5 crepes
You can fill and top the crepes as you wish. I filled mine with a peanut cashew nut butter and topped it with banana slices, walnuts, extra cinnamon and a drizzle of maple syrup!
