One box of Firm tofu🤓
Spaghetti sauce – I used my homemade, spicy turkey marinara 🍅
Shredded cheese, your choice🧀
Asparagus spear, 1-2
Diced sweet onion, 1-2 Tbs
Thai chili, optional if you love spicy🌶
Cornstarch, 2 Tbs
Oil for frying
1. Take tofu and wrap in 2-3 sheets of paper towels. Let sit overnight in a strainer. If you don’t have time, you can also drain by pressing out the water gently until dry enough & slice to bite sized pieces.
2. Mix cornstarch. Dip tofu in mixture, shaking out excess.
3. Heat oil, med high & fry each tofu slice until browned/crispy.
4. Remove the tofu onto a cookie sheet. Layer sauce, cheese, veggies (except arugula & avocado) and broil on low for 5-10 minutes until golden brown, adding arugula & avocado in the end. Enjoy! ☺️
