Taco Salad

Mixed greens
Turkey picadillo (recipe below)
Baby heirloom tomatoes
Dressing: olive oil/apple cider vinegar
For turkey picadillo:
1 lb. uncooked ground turkey (can also use ground beef)
1/4 cup all natural chicken broth
2 tbsp white wine vinegar
1 cup canned all natural tomato sauce
1/2 medium onion, diced
1/4 medium green pepper, diced
1 clove garlic, minced
Coconut oil
Salt, pepper, oregano, cumin, bay leaf
Optional: green olives (sliced) or raisins

Heat a large nonstick pan over medium heat and brown the ground beef in a small amount of coconut oil until fully cooked through, breaking the meat apart as it cooks. Drain well and set aside. Lower heat and sauté garlic, onion and green pepper in 1/2 tbsp coconut oil for 3-5 mins until tender. Add tomato sauce, 1/2 tsp salt, 1/8 tsp pepper, 1 tsp oregano, 1/4 tsp cumin, 1 bay leaf, vinegar and chicken broth. When mixture begins to simmer, add ground turkey back to pan. If you so choose, add a handful of olives or raisins. Combine well, cover and simmer for 20-30 mins on medium-low, stirring occasionally. Serves 4.
