One large sweet potato, peeled and cubed
2 handfuls fresh spinach, roughly chopped
1 tbsp. Ghee or butter
2 tsp. Chipotle seasoning blend or your fav. seasoning
1/4 tsp. salt
1 egg, poached
1 scallion, finely sliced for garnish
Melt ghee in a large cast iron skillet over medium high heat. Carefully add cubed sweet potatoes and cook until sides are lightly browned and cooked through, about 10 minutes. Add in chopped spinach and give it a couple gentle tosses until wilted. Season with chipotle seasoning and salt to taste. Top with a poached egg and give another sprinkle of chipotle seasoning and sliced scallions.
