One Pan Lemon Garlic Chicken Potato Bake

Sauce:
8 chicken drumsticks
½ cup lemon juice
6 cloves garlic, crushed
2 tsp Dijon mustard
2 tbsp honey
1 tbsp dried oregano
1 tsp paprika
1 tbsp olive oil
½ tsp salt & pepper
Bake:
1 cup chicken broth/stock
4 potatoes, quartered
2 red onions, quartered
1 tsp paprika
1 punnet cherry tomatoes (250g/8oz)
Salt and pepper Oil spray (optional) .
Mix Sauce ingredients together. Optional: Marinade chicken overnight. Place chicken, potatoes and onion in baking pan and cover with Sauce. Pour in chicken broth. Cover with foil, bake in 180C/350 oven for 20 minutes. Remove foil, turn chicken, add cherry tomatoes and sprinkle with paprika. Bake for a further 25 minutes until chicken is cooked through. Optional: Spray with oil and boil/grill on high at the end to make chicken and potatoes more golden.
