Low Carb Zucchini Lasagna

4 oz extra lean ground turkey breast
1 Italian Zucchini
1/3 cup no sugar added tomato sauce.
1/4 cup chopped onion
1/4 cup fresh dices tomatoes
salt, pepper, oregano to taste
1/4 cup fat free mozzarella cheese
1/4 cup cottage cheese
1 tbs Parmesan cheese
1 egg white
Start by slicing zucchini into 1/8 thick slices & sprinkle lightly with salt; set aside to drain in colander. After a few minutes blot excess moisture with a paper towel. In a medium sauce pan, brown turkey with your dices tomatoes & onion & salt, pepper, oregano. Add tomato sauce to meat & let it simmer. Meanwhile, in a bowl stir cottage cheese, Parmesan, & egg white until well combined. To assemble spread 1/2 meat sauce into bottom of a prepared personal dish. Then layer a few zucchini slices, cheese mixture, more zucchini slices, meat sauce, & top with mozzarella. Bake at 375F for 35-40 min. Easy peasy. This entire dish is only 300 calories 22g carbs 4g fat 44g protein
