Healthy Kung Pao chicken

Ingredients (2-3 servings):
2 organic chicken breasts, diced small
1 red bell pepper, diced
1/2 onion, sliced thin
1 tbsp grated ginger
5 garlic cloves, minced
10 dried red chili peppers
1/3 cup dry roasted peanuts
2 tbsp olive oil or coconut oil
Minced green onions, to top
1 cup cooked brown rice
For the sauce:
4 tbsp coconut aminos
2 tbsp rice wine vinegar
1 tbsp balsamic vinegar
2 tbsp raw coconut palm sugar
Directions: Cook your rice as directed on the package. In a large pan or wok add in the garlic, ginger, onions, bell pepper, dried chilies, peanuts and oil. Sauté until softened then add in all sauce ingredients and bring to a boiling stirring constantly so the sauce thickens. In a separate pan cook the chicken in oil. Once the chicken is almost fully cooked add it into the sauce and veggie mixture stirring constantly for about 5 mins or until the sauce has thickened. Serve over brown rice and top with green onions. You may add additional chili sauce or sriracha for spice as desired. Enjoy!
