Healthy Cauliflower Pizza

Pizza Base:
1 medium cauliflower, (processed or blended until it resembles rice)
1 cup grated cheddar cheese (or goats / mozzarella cheese
2 medium eggs
sea salt & cracked pepper to taste
Topping:
Cherry tomatoes
Spinach leaves
Turkey bacon
1 medium onion
Sprinkle of cheese
Preheat oven to 200 degrees Celsius, steam cauliflower and squeeze out as much moisture. Mix Cauliflower, cheese & eggs in a bowl then form into base (or mini bases) on a baking tray with baking paper. Season with salt & pepper and bake for approx. 40 min or until base is crispy & brown. Cook bacon, onion & tomatoes in fry pan. Once base is cooked top with these ingredients and a sprinkle of cheese then bake for a further 10 mins! Serve & enjoy!
