1/2 cup egg whites
1/4 cup oats
1/4 cup low fat cottage cheese
1 Tbsp coconut flour
1 tsp baking powder
1 tsp vanilla
2 Tbsp blueberries + 2 Tbsp blueberries
🍳Preheat skillet or pan.
🍳Combine all ingredients, including 2 Tbsp blueberries, in a blender or processor until it reaches a nice batter consistency. Feel free to adjust consistency as desired using almond milk or coconut flour. Stir in the additional 2 Tbsp whole blueberries to your batter.
🍳Cook batter as you would normally for pancakes.
