Chocolate Chip Banana Cake Pancakes

Pancakes full of sweet banana flavor and bitter dark chocolate chips with such a fluffy texture that is reminiscent of banana cake!

Ingredients:
1 cup of flour (of choice)
1 tablespoon of baking powder
1½ tablespoons granulated sweetener of choice
2 smashed bananas (about 1 cups worth)
1 egg
1 teaspoon vanilla extract
6 tablespoons plain almond milk (or any)
½ cup dark chocolate chips (or regular)
Method:
Mix the dry and wet separately until fully combined. Dump the wet onto the dry and mix thoroughly with a fork to keep batter airy. Stir in the chocolate chips. (It will be a thick cake-like batter) Set aside.
Heat griddle pan over medium heat and spray with cooking spray. When hot, lay batter (about ¼ cups worth) down and cook for 1-1½minutes on each side, or until golden brown. Makes approx. 9-¼ cup pancakes.
**Tip** These have more of a cake-like texture, so they won’t bubble up like normal pancakes do when ready to flip. Check the bottom after about 1 minute for doneness.
