Asparagus Amandine

Asparagus served in a quick and easy browned butter, lemon and almond sauce.

1 tablespoon butter
1 pound asparagus trimmed
salt and pepper to taste
1 tablespoon butter
2 tablespoons lemon juice (~1/2 lemon)
1/4 cup almond slices or slivers, toasted
1 tablespoon parsley
salt and pepper to taste
Heat the butter in a pan over medium heat until it is bubbling, add the asparagus, cook until cooked, about 2-3 minutes and set aside.
Add the butter to the pan and cook until it browns, about 2-3 minutes.
Add the almonds and cook until lightly toasted, about 2-3 minutes.
Add the lemon juice and parsley, season with salt and pepper and remove from heat.
Serve the asparagus covered in the sauce.
