Sweet & Tangy Baked Baby

Rinse baby carrots and pat dry. Put into oven safe pan, and drizzle with a tablespoon of Olive Oil. Toss carrots to coat. Cover with tin foil, and bake for 1 hour at 350°F. Uncover, toss carrots, and bake for another hour uncovered until carrots brown to desire. Season with salt if you wish, serve, and enjoy!
