Grilled Caprese Chicken

4 chicken breasts
1 teaspoon garlic powder
Salt and pepper
4 ounces fresh mozzarella
4 ripe tomatoes, sliced
16 Fresh basil leaves
1/2 cup fine aged balsamic vinegar
1 tablespoon sugar substitute
Pinch salt, pepper and garlic powder

Marinate the chicken in the garlic powder, salt and pepper for 2-3 hours. Place on a hot BBQ. Flip chicken and lay alternating pieces of the cheese, tomato and basil during the last minutes of cooking. Place the vinegar, sugar substitute and a pinch of salt, pepper and garlic powder over medium-high heat and stir as it reduces to a thicker syrup. Plate the chicken and drizzle over the top.
