Grilled Avocado BLT with Egg Sandwich

. * Loaf of bread, sliced into 1½ inch slices
* 1 pound of bacon, cooked
* Romaine lettuce
* 2 tomatoes, sliced in rounds
* 2 avocados, sliced in half, pit removed
* 4 eggs, fried
* ½ cup mayonnaise or sub
* Olive oil
Toast the bread in the broiler or on the steam grill pan. Heat the grill pan over medium heat. Using a spoon, scoop the avocados out of the skins. Slice each half in half again so that you have a total of 8 pieces. Lightly brush both sides of the avocado with oil and place them on the grill pan. Grill them for 2-3 minutes and carefully turn them over to grill the opposite side. To Assemble the Sandwich: Spread the toasted bread with a generous smear of mayonnaise. Top the toast with lettuce, bacon, tomato slices, egg and lastly avocado.
