Gluten Free Spicy Quinoa Pizza Bites

2 cups cooked quinoa
2 eggs
1 tsp onion powder
1 tsp garlic (minced or paste)
1 cup turkey pepperoni
1 cup mozzarella cheese
1 tsp habanero sauce

Preheat oven to 350 degrees. Combine all ingredients. Grease mini muffin pan and place 1 heaping tablespoon of the mixture into each cavity. Press down to compact the mixture and remove any air. Bake for 15-20 minutes until the edges are golden brown and cooked through. Remove from the muffin tin and serve with marinara dipping sauce. Makes 24 mini pizza bites. For kids, consider reducing habanero sauce to ½ tsp
