A delicious little decadent twist on traditional French Toast
1/4 cup almond milk
2 teaspoons vanilla extract
1/2 teaspoon ground cinnamon
3 croissants, sliced in half
1/2 cup 0% Greek yogurt
1 tablespoon ff/sf cheesecake pudding mix
1/2 teaspoon vanilla extract
Fresh strawberries, sliced
In a bowl, mix together the eggs, milk, vanilla and cinnamon. Place the sliced croissant in a shallow pan and pour the egg mixture over, turning so both sides are coated. Let soak for at least 1-2 minutes.
Heat a large nonstick skillet over medium-high heat, spray with cooking spray and when hot, add the croissants, frying approx. 2-3 minutes on each side until browned.
Meanwhile, mix the yogurt, pudding mix and vanilla extract to taste.
When the croissants are finished, layer with the yogurt and fresh strawberries.
