Chili Lime Chicken with Creamy Garlic Penne

Chili Lime Chicken
5-6 boneless, skinless chicken tenders
1/4 cup olive oil
3 Tbsp fresh lime juice
2 tsp each chili powder and brown sugar
1 tsp each cumin, paprika, onion powder, garlic powder, &salt
1/2 tsp pepper
pinch cayenne pepper
For the Pasta
16 oz uncooked penne pasta
4 oz cream cheese, cubed
2 tomatoes, diced
2 teaspoons fresh parsley, minced
grated parmesan cheese, optional
For the chicken: Whisk marinade ingredients together in a shallow bowl. Add chicken and marinate for at least 15 minutes. Meanwhile, cook the penne pasta according to package directions and drain. Turn grill to medium heat. Place the chicken on the hot grill, cover with grill lid and cook for a few minutes or until brown on bottom side. Flip chicken, cover and cook until cooked through. Remove to a plate to rest. For the sauce, Melt 4 tbsp butter or sub olive oil in a large skillet over medium high heat. Add 1/2 chopped onion and cook for 3-4 minutes until tender. Add 2 tsp minced garlic and cook for 30 seconds. Add 2 heaping tbsp flour and stir well. Add 1 cup each chicken broth and milk and whisk until smooth. Add cream cheese and stir until melted. Season with salt and pepper. Add cooked pasta, tomatoes and parsley to the sauce and toss to coat. Add grilled chicken on top. Sprinkle with freshly grated parmesan cheese, if desired.
