Chicken Cobb Salad

A Lighter Classic Cobb Salad
I used spring greens instead of iceberg
Clean Lightened-up SIMPLE dressing:
Serves 4
1/3 cup extra virgin olive oil
4 Tbsp apple cider vinegar
2 tsp fresh lemon juice
1/2 tsp dry mustard
1/2 tsp raw honey (optional)
1/2 tsp minced garlic
pinch of sea salt and fresh ground pepper
Whisk & serve immediately

Cobb Salad for 4
4 small chicken breasts (I seasoned with no-salt organic seasonings, black pepper, & fresh lemon while cooking.
6 cups fresh spring greens
pinch of feta or blue cheese Crumbles for each plate
4 strips nitrate-free bacon, crumbled
2 hard boiled eggs, cut into quarters
4 organic Roma tomatoes, quartered
1 large cucumber, sliced
1 avocado, sliced
Layer & arrange equal portions on medium dinner plates, drizzle with dressing.
