1 boneless, skinless chicken breast (4oz)
2 tablespoons balsamic vinegar
1 clove garlic, minced
2 tablespoons diced red onion
1/2 tablespoon avocado or olive oil
Salt & Pepper, to taste
1 tablespoon Italian herb mix
Mix all ingredients in a ziplock bag (easy & no cleaning fuss) and let sit minimum 2 hours. Fry in a nonstick pan until cooked through but tender. I served it with pizza sweet potato fries (olive oil to coat 1 sliced sweet potato, seasoned with flavorgod pizza seasoning), steamed broccoli and a fresh salad.
