1lb / 500 g zucchinis
¼ tsp salt
¾ cup scallions/shallots, finely sliced
2 garlic cloves, crushed
1 cup panko breadcrumbs
2 eggs, lightly beaten
150g / 5 oz feta cheese, crumbled
½ cup parmesan cheese
1 tbsp dried oregano
½ cup plain flour
1 Grate zucchini, sprinkle with salt and leave in colander for 30 minutes.
2 Squeeze out excess liquid, place in bowl and mix with remaining ingredients (except oil spray).
3 Spray 2 trays with oil, dollop heaped tablespoons on the tray, shape into “tot” shapes.
4 Baked at 180C/350F for 25 minutes or until deep golden, swapping the trays at around 20 minutes.
5 Serve with lemon wedges and Minted Yoghurt (yoghurt + fresh mint + olive oil + lemon + salt and pepper).
